January 26, 6-9pm is the date and time for our next Symposia. A Series. IV and I have been ruing/stewing over the menu for some time. Additionally to providing some of the best dining experiences in the Cities, holding Symposia is one way to keep me-as-Chef fresh, to hone my skills, as well as to test new dishes with our guests. I would say, so far, we have been "on-spot" and several of the dishes have been introduced to the public as "additional entrees" and met with such responses as, "the best chicken I ever ate!" Be that as it may, and I count myself VERY lucky to be able to elicit such a reaction in today's cuisine scene, it raises the bar ever higher. Thus, wondering what to make next.

Our theme is the physical and spiritual benefits of yoga, a practise near and dear to my heart, and so health and well-being must play a central role. I turned on The Morning Show the other day and had to shut it off 45 minutes later frustrated that no less than three incorrect pieces of advice regarding health and diet had been broadcast to the general public. If only I had the time, I would have sent in rebuttals and corrections...instead my long-term response is to hold such events as Symposia. A Series. whereby questions and concerns can surface, be addressed and discussed by all present. Clearly the menu will have to be healthy, satisfying, AND make the spirit soar and the soul sing...so as more snow is sifting out of the gray skies, I will be leafing through my various cookbooks again and gleaning inspiration and comfort from one of the greatest adaptable and inclusive cuisines the world has ever seen. Wish me luck!
