After 5pm! Marinated in Petimezi*, Greek EVOO, and sherry vinegar, garlic, mint these tender lamb chops from Hidden Stream Farm are flame grilled to order, drizzled with more Petimezi sauce, sprinkled with a chiffonade of basil and mint, served on cumin scented jasmine rice with a side of mustard and mint yogurt. We paired ours with Roditis, Nemea and Oenodea for a perfect light and tasty meal!

*Petimezi is a traditional sweetener made from the reduction of MUST, the pressed juice of grapes. Often referred to as Grape Molasses

Calamari, a wild-caught more tender relative of squid stuffed with rice, onions, chopped calamari tentacles, herbs and seasonings on braised onions in light tomato and wine sauce. Looks like cannelloni tubes, but the flavorings of organic orange peel, cayenne, thyme, and mint make a rich, complex dish--one of the most requested. An easy pairing with our Skouras Agiorgitiko red $32/bottle or, if you want the flavors to pop, ask for the Chrisohoou, $40/bottle: smokey, deep, complex with a bright cassis finish that zaps the orange and cayenne in this dish.

From Tender Care and Hidden Stream Farms--pork shoulder, jowl and loin sliced, dry rubbed, stacked and vertically broiled. They should have it this good in GREECE! One of our original specials, our beloved Tzia taught Anna this special dish. Lamb braised in white wine and EVO oil, simmered with greens--often romaine, but as easily, escarole, arugula, endive, mustard or a mix thereof--this dish is a favorite Christmas Eve repast. Anna has taught this soul heartening entree in her cooking classes more than any other. Simple and simply delicious.
